Fatalii Hot Sauce
This is a simple fruity tasting Fatalii Hot Sauce. Fatalli Chilli Peppers have a beautiful fruity taste which is great for the base of this sauce, the pears help thicken out the Hot Sauce without overpowering the Fatalii’s. With the addition of lemon this sauce is perfect for seafood or chicken.

Yield: 1 – 1.1 liters
•400ml Fatalii Chilli Peppers
•300ml White Wine Vinegar
•1 Lemongrass Stick
•1 Juiced Lemon
1.Remove the stems from the Fatalli Chilli Peppers.
2.Finely chop the Fatalii Chilli Peppers and lemongrass.
3.Add all of the ingredients into a blender and liquefy the contents (Leave out the salt)
4.Add the Hot Sauce mixture into a pot and slowly heat until it reaches a rolling boil for at least 15minutes.
5.Reduce the heat back down to a simmer for one hour.
6.Salt to taste after the sauce has reduced.
