Hot Steak Sauce
This is a deep flavored Hot Sauce that has been a hit with the family, the mustard seeds give the sauce a varied consistency and flavor which can be a treat.Chocolate Bhut Jolokia’s have a nice subtle flavor that melds in well with BBQ flavors and they work perfectly with this sauce.

Yield: 1-1.25 liters
1tsp – 1tbsp
•1 Large White Onion
•18 Chocolate Bhut Jolokia chilli peppers
•2 Large Swiss Brown Mushrooms
•Juice of 1 Lemon
•375ml Apple Sauce
•175ml jar Wholegrain Mustard Seeds
•2tbsp Mustard seed powder
•2tsp Curry Powder
•2tsp Sea Salt
•150ml Apple Cider Vinegar
•1 tbsp – level Cracked Pepper
•1 Liter BBQ Sauce
1.Finely chop the onions, chilli peppers and mushrooms.
2.In a pot cook down the onion and mushrooms then add in the mustard seeds.
3.If the mixture becomes to dry while cooking down add in some of the vinegar.
4.Add in the rest of the ingredients and adjust the amount of spices to taste.
5.Add in some BBQ sauce, take your time and taste the difference as you go.
6.Bring the hot sauce to a slow rolling boil for at least 15 minutes.
7.Then simmer for up to an hour or until the hot sauce has thickened.
