Tomato and Onion Hot Sauce

This is a new simple runny tomato sauce I’m working on that uses the original 7pod chilli. It’s a good start to a sauce and so far people seem to enjoy it. It has a lot of caramelized onion and a bit of brown sugar to combat the vinegar.

Cook Time: 1 hours, 20 minutes

Total Time: 1 hours, 20 minutes

Yield: 500ml

Ingredients
•400grams Canned Tomatoes
•2 dozen 7 Pod chillies
•175ml Red wine vinegar
•2tsp Salt
•2tsp Coriander
•4 large Brown Onions
•1tbsp Brown Sugar
•6 Cloves Garlic

Cooking Directions
1.Finely chop the brown onion and garlic, add them to a pot with enough of the vinegar to keep the ingredients moist. Cook down the onion for at least ten minutes, deglaze the pot with the remaining vinegar once the onions have started to caramelize.
2.Add the tomatoes to the pot along with any liquid. Roughly chop the 7pod chillies removing the stems as you go. Then add in all of the other ingredients including the chillies.
3.Put the lid on the pot and keep the mixture at a slow boil for one hour. After one hour pull the Hot Sauce off the stove and blend the ingredients. Seeing that the Hot Sauce has already been cooking for one hour it should blend down to a very thin consistency. Add the hot sauce back onto the heat and cook the sauce down at a rolling boil until it reaches the desired thickness.
